When we talk about "natural", "honey" or "washed", we refer to a type of processing that the coffee receives once it is harvested. These processes lead to different cup profiles. Even a coffee collected from the same plant, when processed in different ways, will result in aromas, flavors, acidity and other attributes expressed in different ways.

Natural:
In the natural or dry process, whole coffee drupes are left to dry in the sun. A natural fermentation occurs resulting in complex fruity and sweet notes in the final cup.

Honey:
The Honey process (honey) is a method in which the fresh coffee drupes are pulped, but left to dry without washing. Some of the fruit is still there, but not as much as in the natural process.
The golden sticky mucilage is reminiscent of honey, which is why the process gets its name.
